Just thought I’d pop in to share that I had the right result for lunch and dinner last week. I went to Tesco’s and was lucky enough to grab myself 2 lots of mince from the reduced section and some pork steaks, with carrots and mushrooms, all ready for peas in the freezer, followed by stir fry veg, sprouts (no such thing as not enough some noodles potatoes and bolognaise sauce. With these ingredients, I managed to make lunch and dinner from Monday to Friday.
Granted, I had to cheat one evening. I’m sure I will get to that at some point in my story. I made a decent size Bolognese for my dinner and the rest for lunch the next day for lunch. I was working in chard that day, hoping to grab a wooden fork from Tesco’s meal deal section to save the washing, was there any? No, no there wasn’t! I tried my hardest to tip it into my mouth from my microwavable cup, instead, I took the air lid off and used that as a scoop. But it was great!
The following evening, it was pork stir fry, wishful that I had a wok, but no, I was using a frying pan and made an absolute mess in the kitchen! Nevertheless, stir fry was relatively decent and again, lasted for my lunch the next day. I took a fork with me this time!
And here comes my wee cheat that I did in the end. I ended up making a cottage pie on Thursday evening. Little did I know how long it was going to take, but I did start it really late. When I was cooking my gravy up, throwing random ingredients in, I ran to the shop to grab a loaf as I was starving. Ripped the bag open and dipping a slice of bread into the gravy scholdering my mouth as I was having my dinner. When It actually came to the point of sticking this in the oven, I filled up my tray and soon realised that I may have over filled the gravy part as I was trying to spread my mustard mash over it, making more of a mess than stir fry night. Didn’t think it was possible, there we go!

For the first time, I think I’ve eaten £20 during the working week! At the same time, I was really lucky to hit Tesco’s in langport, and grab the food that was in the reduced section. Whether I can be as lucky as last week, I’m sure I would tell you if I did or not. Hit yourselves lucky and hit the reduced sections and see what meals you can come up with.
